No Crust Cranberry Pie.

No Crust Cranberry Pie is a simple recipe using fresh cranberries and orange zest for an easy last minute dessert. I promise it doesn’t taste last minute. It is a pie made without the fuss of dealing with a crust. Close your eyes on the first bite and you will think you spent the time making crust and filling. Another bonus, no soggy crust woes here!

Cranberry Season! Fresh cranberries are only available for a short time in the fall and early winter. Working with just harvested berries is a treat of intense flavor. We are in New England at the moment and I don’t want to miss out of having cranberries right from the source. So, I have adapted a trusted recipe to make a quick holiday dessert.

Eat No Crust Cranberry Pie for dessert but make sure you save some for breakfast the next morning. For dessert I top it with whipped cream or ice cream. For breakfast, straight out of the dish - right? If you are feeling ambitious, make 2 pies. One for now and one for the freezer to have on hand for unexpected company. Family………

No Crust Cranberry Pie

Recipe is only slightly adapted from www.averiecooks.com.

INGREDIENTS:

  • 2 cups of fresh cranberries, reserving 1/4 cup for the pie top

  • 1/2 cup of unsalted butter, more for preparing the pie dish

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 cup granulated sugar

  • 1 cup all-purpose flour

  • 1 teaspoon cinnamon

  • 1/4 teaspoon salt

  • 1 tablespoon orange zest

  • 3 tablespoons of raw sugar, for the pie top

PROCESS:

  • Preheat oven to 350F.

  • Prepare 9 inch glass pie dish with butter.

  • Melt 1/2 cup of unsalted butter. Set aside and let cool a bit.

  • In a medium bowl stir together the sugar, flour, cinnamon, salt and orange zest.

  • In a small bowl, whisk the eggs and vanilla..

  • Making sure the melted butter is not hot enough to cook the eggs, add the melted butter to the egg mixture.

  • Add the egg and butter mixture to the dry ingredients and mix just until incorporated. Fold in 1 3/4 cups of cranberries.

  • Pour into prepared pie dish and smooth out with a spatula. The batter is thick.

  • Top with 1/4 cup of remaining cranberries and sprinkle with the raw sugar.

  • Bake for about 40 minutes or until tester comes out clean.

  • Remove dish to a wire rack.

  • Eat warm or at room temperature.

Can be served with ice cream or whipped cream!
